Ann Richards Lemon Yogurt Cake…


Since today is the last full day of winter, I thought I would share with you a wonderful spring cake. This is perfect to serve as desert on Easter. The recipe comes from The Texas Celebrity Cookbook and was submitted by Ann Richards.

Ms. Richards became nationally known when she gave the keynote address at the Democratic National Convention in 1988. Ms. Richards served as Governor of Texas from 1991 – 1995 and was defeated for re-election by George W. Bush.

 While she was the second woman to serve as Governor of Texas, she is often considered the first elected woman. The first was Miriam Ferguson, who stepped into the position after her husband was impeached. Mrs. Ferguson missed becoming the first woman to serve as Governor in the United States by two weeks. Nellie Ross, of Wyoming was the first after her husband passed away.

Chocolate Peppermint Smoothie

Every year we buy several packages of candy canes in every flavor and color. By the time, we take the tree the down it seems like the peppermint ones are left. This year, I tried not but the peppermint candy canes and my husband had a fit because they weren’t on the tree. Peppermint candy canes are like that one dish during the holiday meals that nobody eats but every expects on the table… sigh
I can’t throw them out, it just goes against the grain. I had a recipe from the food network a few years ago that I have (of course) played with and changed a bit. I had made hot chocolate set it down and by the time I came back to it was cold, yuck. The recipe was sitting was on the counter so I used the now cold hot chocolate in the smoothie and like the results much better.
The original recipe had you rim the glass with the crushed candy canes. Which is fine, I prefer to add the candy canes to the smoothie. If you prefer to make with the peppermint in the smoothie and on the rim of the glass make sure, you have 6 crushed candy canes.
Ingredients:
         2 cups Yoplait chocolate mousse yogurt
         1 cup ice
         1 cup chocolate milk or cold, hot chocolate
         3 candy canes, crushed
Directions:
Place all ingredients in a blender. Puree until smooth. 

To dress up you glass with crushed peppermint:

Moisten the rims of each glass and press into crushed candy cane. Drizzle chocolate syrup in each glass then pour in smoothie

Battle Colds and Boost Your Vitamin Intake

The temperature outside Tuesday morning was forty-four degrees; summer is over. Bring on the cold and flu season. In our house, we fight the cold and flu season with fruit smoothies.
 If your children are mine, getting them to swallow a vitamin pill can be more hassle than it is worth. This tasty smoothie has solved the "swallow your pill" fight in our house. We make this two different ways, depending on which ingredient is on hand.  One variation is with Yoplait Light Yogurt, the other with Simply Orange brand orange juice.
I will buy and freeze fresh fruit in the summer for winter use, but you can buy cut-frozen fruit in the freezer section of the grocery store.
This recipe will also accept a vanilla flavored, whey protein powder, without altering the flavor
 
Ingredients:
1 cup of Simply Orange, orange juice / Or 1 container of Yoplait Light yogurt (vanilla, or one of the fruits in the smoothie)
6 whole strawberries, fresh if you have them, can be frozen
1 cup sliced peaches, frozen
1 medium banana,
¼ cup of blueberries, frozen
(If you are using fresh fruit add 6 ice cubes)
Directions:
Place orange juice in blender followed by, blueberries, strawberries, banana, then peaches (and ice if needed)
Blend on high until smooth, if need be you can add warm water ¼ cup at a time.
Should make 16 plus ounces
