How about trying Flambéed Chorizo?
As simple and easy as this is to do, just remember, you
should have appropriate fire suppression nearby if need be. Okay fire safety
warning taken care of, let’s get started!
You will need 10 ounces of Chorizo, 3 Tablespoons of Vodka,
and cocktail picks.

Slice the Chorizo about 1 to 1 ½ inch thick on the diagonal
Place in a flameproof dish, pour vodka over the top, and
ignite!
When the vodka burns off and the flame has extinguished,
hand out the cocktail picks.
I would stand back a bit so you don’t get trampled.
