This week we had a mini family reunion. This was the first
time the latest generation of cousins got to spend time with each other. Of
this set of cousins, three were missing because of school, work and pregnancy.
It was fun to see how these kids, whose only common denominator is being
related by blood, fell into an easy companionship and acted as if they had seen
each other every day of their lives.
As with most family gatherings, there is always food! One
dish that stood out was a fresh corn casserole my Aunt made. This is recipe uncomplicated,
scrumptious and if you are looking for a recipe for a new cook or student cook
this would a great choice.
The ingredients call for fresh off the cob, yellow corn. Being
that it is winter, fresh corn is hard to find, but do not worry you can make a substitute
with frozen corn.
If you feel the need
to expand the taste of this casserole, try adding in some sliced jalapenos or topping
the casserole with a mixture of bread crumbs and cheese before baking. Just
always remember, cooking should be an experiment in creativity, don’t limit
yourself to just the ingredients in the recipe.
