Strawberry Honey Butter...

Through Marshall Farms, I found The Unintentional Urban Farmer. On their Facebook page is a recipe for Strawberry Honey Butter.

If you have been following my blog for a few months, you know I like to make butter from scratch and flavor it. So I could not resist trying this recipe! If you prefer not to spend the time making butter, the recipe is written using stick butter. Please make sure you use butter and not margarine.

When I contacted The Unintentional Urban Farmer for permission to use the recipe, they told me "however much we would love to claim it as ours, the recipe is  not ours." They told me where they had found the recipe and were unable to find the source. I do not see why, you could not make this recipe with blueberries or blackberries. The biggest and most difficult task in making this butter would be getting the berries through the sieve. The blackberries would be the most difficult, because of their seeds.

Fresh Strawberry Pie…

Strawberries have shown up in the grocery stores, though they are still over priced, I could not help but get some.
I have leftover berries from last summer in my freezer; I have been guarding from my son Tyler. Tyler loves strawberries as much as I do. He will sneak them from the freezer and eat them frozen, and has been known to steal a jar of my freezer jam. I have had a bag of strawberries hidden and there are just enough left to make the glaze for strawberry pie.
The glaze is so simple and tasty. The only way I will buy the pre-packaged stuff again is if I am be held hostage!
To make the fresh strawberry pie, first you need a piecrust. If you use a frozen or fresh crust from the store, bake it according to the directions.
Next, you need to make Strawberry Pie Glaze… The recipe calls for food coloring. I have never added to my glaze, it is your choice.
Ingredients:
1cup fresh whole strawberries, hulled, divided
1 cup sugar
3 tablespoons cornstarch
3/4 cup water
Few drops red food coloring, optional
Directions:
Mash strawberries
In a saucepan, combine sugar and cornstarch stir in water and mashed berries.
Bring to a boil, stirring constantly. Stir in food coloring if desired.
 Cook and stir 3 minutes more. Cool for 10 minutes.

To assemble the pie…
Wash and hull 4 ½ - 5 cups fresh whole strawberries
Spread 1/3 cup glaze over bottom of cooked piecrust.
Arrange strawberries in the piecrust then spoon the remaining glaze over berries.
 Chill for 1-2 hours, top with whipped cream.
If you want to serve to your some special on Valentine’s Day, serve the pie with Moscato or a sweet Riesling wine.

Battle Colds and Boost Your Vitamin Intake

The temperature outside Tuesday morning was forty-four degrees; summer is over. Bring on the cold and flu season. In our house, we fight the cold and flu season with fruit smoothies.
 If your children are mine, getting them to swallow a vitamin pill can be more hassle than it is worth. This tasty smoothie has solved the "swallow your pill" fight in our house. We make this two different ways, depending on which ingredient is on hand.  One variation is with Yoplait Light Yogurt, the other with Simply Orange brand orange juice.
I will buy and freeze fresh fruit in the summer for winter use, but you can buy cut-frozen fruit in the freezer section of the grocery store.
This recipe will also accept a vanilla flavored, whey protein powder, without altering the flavor
 
Ingredients:
1 cup of Simply Orange, orange juice / Or 1 container of Yoplait Light yogurt (vanilla, or one of the fruits in the smoothie)
6 whole strawberries, fresh if you have them, can be frozen
1 cup sliced peaches, frozen
1 medium banana,
¼ cup of blueberries, frozen
(If you are using fresh fruit add 6 ice cubes)
Directions:
Place orange juice in blender followed by, blueberries, strawberries, banana, then peaches (and ice if needed)
Blend on high until smooth, if need be you can add warm water ¼ cup at a time.
Should make 16 plus ounces
