Crock-pot Ginger Pork Chops…

What would we do without our slow cookers or Crock-pots? If you do have one or do not hardly use the one you have, you are missing out. There are thousands of recipes for the slow cooker. I have two and really could use the three pot slow cooker or the real pretty All-Clad Deluxe Slow Cooker.  
When I was working full time, I used a slow cooker every day. I had a couple cookbooks, but learned the real beauty of one the slow cooker was just taking combinations of ingredients and coming up with new recipes. The recipe for day comes from the 1001 Slow Cooker Recipes cookbook written by Barbara C Jones.
I don’t think experimenting as I was, I would have crossed teriyaki sauce with tomato bisque soup. It works though in combination of the other ingredients to make a wonderful meal. I will sometimes add in sliced apples and a ¼ cup of apple cider. For other variations, you could use garlic or even orange juice.
You just have to be a bit daring and creative, use the recipe as a guidebook instead of a law book.

Crock Pot Chai Tea...

Today was one of those rare days that we spent the entire day out shopping. Everyone had received a gift card, cash, or both for Christmas this year. The daughter spent most of her money on clothes and splurged at the toy store for a huge remote controlled monster truck. The son spent a tiny bit of one gift card. Only to discover what he bought has to be taken back, because it is defective. My husband spent over an hour roaming the tool department at Sears, finally leaving with nothing because he could not decide what he wanted. After a quick stop at the house for lunch, I did a repeat of my husband’s performance only at Bed Bath and Beyond… sigh. Sometimes there is too many choices and not sure what I want the most.
From there we swung back by the house, to pick up the kids bowling equipment for practice. The bowling alley was freezing and after sitting for over two hours, I wish I had a pot of this Chai Tea waiting for me. This would be great to serve for at a brunch, if you are having a New Year’s party, this might be good for after midnight.
Chai is generally a sweet drink, but you may reduce the sweetener to taste.
 If whole spices are not easily available, you may use powders. However, you will
wish to strain through several layers of cheesecloth or a coffee filter before
serving.
For your vegan friends, you can use a non-dairy milk

Crock Pot Chai Tea

2 quarts (8 cups) water
8 bags black tea
3/4 cup sugar or Splenda **
16 whole cloves
16 whole cardamom seeds, pods removed
5 cinnamon sticks
8 slices fresh ginger
1 cup milk
Optional: more cinnamon sticks



1. Combine water, tea bags, sugar, cloves, cardamom, cinnamon sticks and ginger
in your slow cooker. Cover and cook on HIGH 2-2.5 hours.

2. Strain mixture and discard solids. (At this point, the chai tea may be
covered and refrigerated up to 3 days.)

3. Just before serving, stir in the milk. Serve warm or chilled with additional
cinnamon sticks for garnishes, if desired.


Makes 8-10 servings.

Pumpkin, Gingered Soup

One more pumpkin soup recipe for you to try. This one I would suggest carving out cooking pumpkins and serving the soup in it. This would make a lovely dish for American Thanksgiving dinner. This is another super easy and filling soup that is also not going take up very much of your time. If you are making this for a dinner party, you can very easily make a few days ahead of time. Store in an airtight container then reheat on low medium when ready to use. The original recipe can be found in Country Living website. 
   
Ingredients:
2 15 ounce cans pumpkin puree (not pie filling)
5 1/3 cups of chicken bouillon or 43.5 ounces of chicken broth
1 1/3 cups of white grape juice
1/3 cup peanut butter, creamy
2 Tablespoons minced garlic
2 Tablespoons minced fresh ginger, or ¼ teaspoon dried ground ginger
3 Tablespoons chopped green onions
½ teaspoon cayenne pepper
½ tablespoon lime juice
Directions:
Combine pumpkin puree, chicken broth, and pear nectar, in a large soup pot.

Bring to a boil over high heat. Cover, reduce heat to low, and simmer 10 minutes

Transfer one cup of pumpkin mixture to a food processor, add peanut butter and mix until smooth.

Return to pot and add remaining ingredients, simmer for 5 minutes before serving.

Garnish with either pumpkin seeds or chives.

To serve in a pumpkin:
Preheat oven to 375°F
Clean a cooking pumpkin, removing all pulp and seeds.
Place pumpkins on a baking sheet lined with foil
Bake for 45 minutes with top on. Allow to cool before adding soup

Grandma Webb’s, Bourbon Sweet Potatoes & More!

This recipe has been in my family for a while; my husband calls it a true southern dish. Keep in mind; this is the same man who deemed me a Yankee, because my family comes from Kentucky.
This recipe was my grandmother's. My second cousin, is six years old. Kate about had a fit when she saw her grandmother putting alcohol in this recipe. With the wisdom of a six-year-old, Kate questioned her grandmother, "does my mom know you're serving me alcohol?" Her grandmother laughed and said, "Well I sure hope so, she's been eating this all of her life!"
Grandma Webb’s Bourbon Sweet Potatoes
Ingredients:
3 pounds sweet potatoes, baked, peeled and mashed
                or if you absolutely must 3, 1 pound cans of canned sweet potatoes (Not yams!)
1 cup white sugar
1/3 cup a good Kentucky bourbon (If it is not good enough to drink, then it is not good enough to cook with)
1/2 cup margarine
1/2 teaspoon vanilla extract, preferably not imitation
2 cups miniature marshmallows
Directions:
Preheat oven to 350°F
Heat sweet potatoes until hot, mash if not already done so
Add ingredients, except marshmallows, blend well
Place mixture in a 2-quart baking dish, sprinkle top with marshmallows
Bake uncovered for 30 min. marshmallows should be golden brown

Paddy’s sweet potato soufflĂ©:
I inherited this recipe when I married my husband. I have not tinkered with this recipe.*Please don't die of shock*I have threatened a few times though, to place this in a piecrust and serve it as desert. Again, make sure if you use canned sweet potatoes there actually sweet potatoes and not yams.
My father recently sent me a similar recipe that is my stepmothers. There are a couple ingredients differences between the two, but they are basically the same recipe.
Ingredients:
3 cups cooked and mashed sweet potatoes, or if need be one 1 pound canned sweet potatoes
1/2 cup sugar, white
two large eggs
1 teaspoon vanilla extract
1/2 cup milk
1/3 cup butter
2/3 cup brown sugar, packed
1/3 cup flour
1 cup chopped pecans
Directions:
Preheat oven to 350°
Combine first five ingredients, until blended
Pour into a 2 quart casserole dish, sprinkle with topping
Topping:
In separate bowl combine brown sugar and flour
Cut in butter
 add pecans
Sprinkle over the top of the sweet potato mixture
Cook for 30 min. uncovered

Sweet Potato, Potato Salad:
My aunt sent me this recipe the other day, and I cannot wait to make. I would say it is a new twist on the traditional potato salad.
Ingredients:
two baking potatoes
one sweet potato
four eggs
two stalks of celery, chopped
one onion, chopped
3/4 cup mayonnaise
1 tablespoon prepared mustard
1 teaspoon salt
1 1/2 teaspoons of ground black pepper
Directions:
In a large pot of salted boiling water add potatoes (baking and sweet) and cook until tender but still firm. This will take approximately 30 min.
Drain, cool, peel and chop
Place eggs in saucepan and cover with cold water bring to boil. Cover, remove from heat, and let eggs stand in hot water for 10 to 12 min.
Remove from hot water; cool, peel and chop
In a large bowl, combine potatoes, eggs, celery, and onion
In a separate bowl, whisk together mayonnaise, mustard, salt and pepper. Add to potato mixture toss well to coat.
Place in refrigerator for two hours and serve cold

Ginger Peach Sweet Potato Bake:
2 pounds of canned sweet potatoes, not yams
1/2 cup brown sugar, packed
1/3 cup broken unsalted cashews,(you can substitute with either pecans or walnuts)
1/4 teaspoon ground ginger
1 9 ounce can of sliced peaches
3 tablespoons butter
Directions:
Preheat oven to 350°F
Place with potatoes and a buttered 10 x 6 x 2" dish
Open and drain peaches
In a bowl, combine brown sugar, cashews, ginger, and 1/2 teaspoons salt
Layer potatoes peaches and nut mixture
Cut butter into chunks and sprinkle on top of mixture
Cover dish and bake for 30 min.
Uncover bake for 10 more minutes
Spoon syrup from pan over sweet potatoes before serving

Green Bean Supreme and Honey Smoked Pork Chops


It is well know I cannot leave a recipe alone, I have to tinker with each of them. The green bean supreme recipe came from my mother-in-law, when I married her son. This dish is a staple on our holiday table, and to be honest, I did not really tinker with this one too much until the other day.
Green Bean Supreme
Ingredients:
2 Tablespoons of butter
1 small yellow onion minced
2 Tablespoons of flour
2 Tablespoons of water
½ teaspoon of fresh lemon peel
1 large 28-33 ounce can of French style green beans (drained) I prefer Del-Monte brand
1 cup sour cream
½ cup of crushed Ritz crackers
1 cup Kraft Colby/Jack finely shredded cheese
1 teaspoon crushed red pepper flakes

Directions:
Pre-heat oven to 350°F
In skillet melt butter add onion and sauté until translucent.
Gradually stir in flour, lemon peel, and then water making a roux.
Add drained green beans and sour cream into skillet mix well.
Pour into a 2 quart baking dish, sprinkle with crushed red pepper.
Cover top with cheese then crushed Ritz crackers
Bake for 30 minutes
** You can omit the red peppers, if you prefer. They give a bit of spice and heat but not enough to be spicy**

Honey Smoked Pork Chops
3 Tablespoon honey
1 teaspoon liquid smoke
3 Tablespoon minced garlic
¼ teaspoon sage
1 teaspoon ginger
1 teaspoon hot Chinese mustard
4 Tablespoons butter, melted
4 thick center cut pork chops
Ingredients:
Pre-heat oven 350°F
Mix ginger, sage, garlic, liquid smoke and honey in bowl.
 Line small baking pan with aluminum foil,
Brush all sides of pork chop with butter then place on pan.
Brush honey smoke mix on chops, place in oven for 15 minutes
After 15 minutes flip chops over and brush with remaining mix cook an additional twenty minutes

Try Me Tuesday...

Saturday, I dished dinner and called the family in to eat. I was met with mixed enthusiasm, as to was to what was on their plates. First item was the soup; my husband, gave me a questioning look then asked “Why is there so little in my bowl?” I gave each of them about a quarter cup of soup, which just filled the bottom of the bowl. I was not sure if they would like soup, so why waste it?
Next on their plate was a honey-smoked thick cut pork chop, the kind I usually get for stuffing, a Cheryl worthy buttery yeast roll and Paddy’s green bean supreme. 
The soup was huge a big hit. My husband went back for two whole bowls; he and our daughter were already calling dibs on the leftovers for lunch this week. This was a triumph since my husband cannot stand the taste of tomato soup. *I do a happy dance and throw confetti!*
 The soup has creamy tomato taste, like tomato bisque soup. The soups only dairy is four tablespoons of butter. So where is the soup getting its creamy taste? Pumpkin, yes I said pumpkin. The other surprising aspect to this recipe is with two simple changes you could serve it to your vegan friends.

 
Not Bisque, Tomato Bisque Soup
1 small onion, chopped
4 Tablespoons of butter (could use vegetable oil)
1 28 oz can of whole tomatoes
2 15oz can of whole pumpkin, not pie filling
4 cups of chicken broth, (could use vegetable stock, but it will alter the taste)
2 Tablespoons dried parsley
½ teaspoon of ground ginger
2Tablespoons ground pepper
1 teaspoon of white sugar
Directions:
In soup pot, melt butter and sauté onions until soft and translucent
Add broth and bring to a boil for ten minutes
Add entire can of tomatoes to a food processor or blender, puree until smooth
Add tomato puree, canned pumpkin and spices to broth
Simmer for fifteen minutes
